Getting together and food in Italian are synonymous (well, not really, but I hope its clear what I meant). In my opinion, nothing says ‘I love you’ better than a carefully prepared meal, filled with love and passion.
My ideal Valentine’s dinner is delicate and beautifully presented. A variation of tastes, colours, smells and textures. But at the same time discreet, allowing time to enjoy the conversation and intimate time with your partner.
When I think about Valentine’s day in an Italian restaurant, memories are painted in red and lit by candlelight. There might also be a violinist playing a ‘serenata’, words are whispered and even the chefs are quieter than usual!
One of my favorite things, when it comes to modern cuisine, are medleys. Playing with one main ingredient, but pairing it with something different each time, enhancing sapidity, sweetness, crunchiness and so on. So, for this years Valentine’s menu I start a medley of king prawns, such a versatile ingredient, what ever you do with king prawns they are great!
The next course, may create some controvesry, strawberry risotto. However, if you keep the balance with some shallot and a very high quality parmesan it creates the most wonderful taste sensation.
It’s quite about time to mention the wine. Although bubbles are probably a winning choice, don’t forget the variety of high quality Italian wines, making most palates happy and can provide a perfect pairing to my menu.
This year’s choice of dessert is a bit unusual for me, readers from last year will know I normally choose chocolate, but this year I want something unusual with spices and sweet flavors from the South. Carrying all the history and smells of the Arab’s domination, cardamom panna cotta with passion fruit, edible flowers and meringue. A colourful dish, delicate, but with a strong identity that will be the perfect end to your valentines meal.
