Preheat your oven at 180 °C (gas mark 4). Put both red and yellow pepper in a baking pan cover with some baking paper and roast them for about 15 minutes, until it will be easy to remove the skin. Allow the to cool down and finely chop them.
On the hob, brown the finely chopped shallot and the garlic clove in a couple of tablespoon of olive oil. Remove the garlic clove and add the chopped peppers. Fry everything for a couple of minutes and then add the chopped tomatoes. Adjust with salt and pepper and cook at the medium heat for 10 minutes. Add the thyme leaves.
Wash the courgettes, aubergines and tomatoes and slice them as in the picture. In a baking pan, covered with baking paper, pour the pepper and tomatoes mixture. Arrange alternatevely the vegetables slices as in the picture until all the mixture is completely covered. Cut a piece of baking paper and cover the ratatoulle. Put it in the oven at 160 °C (gas mark 3) for 60 minutes. Then remove the top baking paper and put again in the oven for 15 minutes.
A bit long but fun to make with the kids, especially after watching the Disney movie "Rattaouille".
